Begin by heating a good glug of oil in a large frying pan then add in the chopped onion and garlic, cooking over a medium heat for 3-4 minutes then add in cherry tomatoes and cook for a further 5 minutes. Next add in the feta, fresh oregano, red chilli and glug of red wine vinegar then blitz until smooth. Check the seasoning and adjust if necessary. Return to the pan then add in the fresh cherry tomatoes, chopped courgette and finally the fresh prawns. Cook over a medium heat for 3-4 minutes or until the prawns turn from translucent to pink. Serve with a generous handful of fresh coriander and extra freshly ground black pepper.
