Thoroughly combine both the yogurt and the salt then fold your cheesecloth in half so it’s double layered. Pour in the yogurt and salt mixture then tightly tie up the cheesecloth with string and place in a sieve over a bowl so the excess liquid can drain.  Leave for 2-3 hours or overnight for a firmer texture.
Once you’ve combined the salt you can also add in spice, herbs or whatever takes your fancy.
Keep refrigerated.
