First preheat the oven to 200 degrees Celsius. Add the celeriac chips and spring onions to a baking tray with a glug of olive oil and seasoning. Roast for 10-12 minutes or until they begin to turn golden then add in the pumpkin seeds and walnuts to one side of the tray and green beans and sugar snap peas to the other. Drizzle a little olive oil and roast for a couple of minutes. Combine all ingredients into a large bowl, either keeping ingredients in sections or mixing it up. Whisk together the dressing ingredients and drizzle over. Add a little extra seasoning and serve.
