Begin by preheating your oven and cooking the jackfruit as per instructions for 30 minutes.
Prepare your garnishes and set to one side.
While you measure out your ingredients for the waffles, allow the waffle irons to heat up. Brush generously with butter or oil.
Combine all dry waffle ingredients in a bowl. In another combine all wet ingredients, then gradually add wet ingredients to the dry. Stir thoroughly then fold in the spring onions and feta and spoon into the waffle iron. Cook until golden and crisp. You can keep the waffles warm in the oven while you make up your second batch.
Serve the waffle topped with the pulled jackfruit. I like to shred this a little before serving by using two forks. Scatter over the garnishes and finish with a good drizzle of maple syrup. The sweet and salty flavours work perfectly together.
